July Loaves and Fishes dinner

Description: Our next Loaves & Fishes dinner is Thursday, July 29. We’re enjoying the heat of summer by offering Mexican Burger Casserole, salad and dessert. Thanks to the folks who helped in June, and particularly to Priscilla who agreed to coordinate the day and close up when I had to be out of town.

We need volunteers to make casseroles; one recipe is pasted below or you’re welcome to use your own recipe. Loaves and Fishes has plenty of beef and wild game burger, so I will pick up frozen burger packages to distribute to anyone volunteering to make a casserole. I’ll also see if they have some medium cans of stewed tomatoes. We’ll pull together a salad there.

Once again, I will be out of town – this time in the Great Falls area. Is anyone available to coordinate the serving and closing that evening? As I mentioned last month, it actually goes pretty smoothly because of the seasoned help we have. I will work with you beforehand on what’s needed that day.

Can you provide a Mexican burger casserole or dessert? You can drop off the casserole or dessert at Loaves and Fishes between noon and 1 pm on Thursday, July 29.

We will as usual need a crew of folks to work that afternoon from 2:30 pm to 6:30 pm to make the salad, coordinate the meal, serve and clean up. Can you help that afternoon, or some part of that time?

Mexican Casserole

1 lb. lean ground beef
2 ½ tsp. chili powder
¼ cup water
1 cup chopped green onion (white and green parts)
1 medium can stewed tomatoes
1 can cream of chicken soup
1 small package of tortilla chips
1 can diced green chili peppers
1 can chili beans in sauce, undrained
1 – 2 cups grated cheddar cheese
salt and pepper to taste

Brown meat, season with salt, pepper and chili powder. Add water and simmer until most of moisture is gone.

Line 13×9 pan with tortilla chips. Layer rest of the ingredients in this order: soup, meat, beans, onions, tomatoes, peppers, cheese.

Bake 45 minutes at 350 degrees.
