Our next date to prepare and serve at Loaves and Fishes is Thursday, May 27. We’re welcoming some warmer weather with Beef Enchiladas and chips, salad and dessert.
Again, please remember that we have changed our day for serving dinner from the last Friday of the month to the last Thursday of the month.
Thanks to the folks who helped in April – the chicken and dumplings meal turned out to be great comfort food on a rainy evening! You folks have been so good in responding to the need in our community to help neighbors, many of them older citizens, for whom a warm meal in the company of others may mean so much.
If you can help by making a tray (or two!) of beef enchiladas, or a dessert, you are welcome to use your own enchilada recipe, or you can use the recipe I’ve pasted below. We’ll pull together a salad there. I will pick up burger at L&F for you to use and can provide cheese and tortillas. Please let me know if you want any of these ingredients and I’ll arrange to get them to you.
Can you provide a tray of beef enchiladas or dessert? You can drop off the enchiladas or dessert at Loaves and Fishes between noon and 1 pm on Thursday, May 27. If that time doesn’t work, please let me know and I’ll work to accommodate your schedule.
We will need a crew of folks to work that afternoon from 3 pm to 6:30 pm (a shortened shift this time) to make the salad, coordinate the meal, serve and clean up. Can you help that afternoon, or some part of that time?

Also, if you have some empty yogurt containers that folks can use for take-out meals, that would be helpful, too. You can drop them off on my front porch (212 South 6th).

BEEF ENCHILADAS
Makes 10 servings
Ingredients
1 pound lean ground beef
1 small onion, chopped
10 (10 inch) flour tortillas
2 cups shredded Cheddar cheese
1 (2.25 ounce) can sliced black olives, drained
15-20 oz can of enchilada sauce
Directions
1. Preheat oven to 350 degrees F. In a medium skillet over medium high heat, cook the ground beef and onion until beef is evenly browned and onion is tender.
2. Pour 1/4 cup of the enchilada sauce into the bottom of a 9×13 inch baking dish.
3. On each flour tortilla, place 1/3 to ½ cup of the ground beef mixture, and sprinkle with Cheddar cheese.
4. Tightly roll the tortillas and place seam side down in the baking dish.
5. Pour the remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese and olives.
6. Bake in a preheated oven for 20 minutes, or until the sauce is bubbly and cheese is thoroughly melted.
